Everyone LOVES a good Breakfast and this Granola one is amazing. This one is super yummy as it’s full of coconut, pumpkin seeds, cashews and sunflower seeds!  It’s great to make a big batch and also serve for brunch super delicious served it with homemade cashew Milk!  I’m sure you’ll be back for seconds, thirds or fourths!

This granola is dangerously addictive! So make a good size batch so you can eat it over a 1-2 week period, depending on how big your eyes…stomach or household is!

TIP: Healthy Breakfast Granola is also the perfect for a trail mix or desk snack!

Preparation time allow 10 minutes

Ingredients

2 cups unsweetened shredded coconut
2 cups cashews chopped
1 cup pumpkin seeds
1 cup sunflower seeds
2 tbs. macadamia oil
1 tsp. vanilla extract

 

Method
  1. Preheat oven to 180°C (350°F) and line 2 baking trays with baking paper.
  2. In a large bowl mix the cashews, pumpkin seeds, sunflower seeds, macadamia oil and vanilla extract.
  3. Transfer the nut and seed mix on to the prepared trays evenly.
  4. Place in to the oven for 10 minutes, stir around a little and place back in to the oven for a further 5 minutes. Keep an eye on it as it can burn super easy.
  5. Allow to cool.
  6. Transfer in to a large serving bowl or container, add the two cups of coconut and mix well.
