MISO SALMON & BUCKWHEAT NOODLES

Fancy a healthy, quick-fix dinner?
My miso salmon & buckwheat noodles has become a regular at home. I usually don’t add the miso but some people love eating buckwheat noodles and for me they are so easy to digest. Honestly, give this recipe a go, it’s so TASTY.
INGREDIENTS
2 salmon fillets
1 pack of buckwheat noodles
1/4 red cabbage
1 cucumber
1 tbsp of miso paste
1/2 lemon
2 tbsp of sesame oil
1 tbsp of grated ginger
DIRECTIONS
- Preheat the oven to 200 C and start then start to whisk the miso, sesame oil, lemon juice and ginger together.
- Brush 1/2 the dressing over the salmon, bake in the oven for 10 mins.
- Shave the cabbage with a mandolin or sharp knife. Mix with the rest of the dressing.
- Rinse the buckwheat noodles, cook as per pack instruction. Rinse after. Slice the cucumber into sticks
- Serve together with sesame seeds and chilli flakes.
